Banana, Date and Walnut Muffins

Packed with healthy fats, fibre and protein, these muffins are perfect for an on-the-go breakfast or mid-afternoon snack to keep you satisfied all day. Eat them fresh or store them in the freezer to make for the perfect work from home pick me up.

Ingredients:

Dry ingredients:

  • 2 cups almond meal
  • ¾ cup roughly chopped walnuts
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • A pinch of sea salt

Wet ingredients:

  • 1 cup fresh dates, pitted and chopped
  • 3 eggs
  • 2 large bananas (+ 1 extra, thinly sliced)
  • ¼ cup virgin organic coconut oil melted
  • 1 tsp chia seeds
  • 1 tbsp maple syrup (to drizzle, optional)

Method:

  1. Pre heat the oven to 180C degrees
  2. Combine all the dry ingredients in a large bowl
  3. In a food processor, combine the dates, eggs, 2 large bananas and coconut oil
  4. Add the wet mixture to the dry mixture and combine
  5. Divide mixture into a muffin tin and top with chia seeds and sliced banana
  6. Bake for 35-40 mins or until muffins are golden
  7. Drizzle with maple syrup for added sweetness
