Easy banana pancakes

Spending more time at home recently has led to many of us dusting off our old cookbooks, feeling inspired to use the coming weeks to reap the rewards of slow cooking.

Sometimes, however, the best recipes are the simplest. These no-fail banana pancakes brought to you by Sheridan Hauser, Personal Trainer, Nutritionist and Partner of RISE by Studio PP, will ensure you start every day the right way with three affordable ingredients helping to fuel your mind and body for a productive day ahead.

Note: this recipe is gluten free, diary free and refined sugar free

(Serves 2)

Ingredients:

  • 2 Bananas
  • 4 Eggs
  • 1 tbsp Cinnamon
  • 1 tbsp Coconut oil

Method:

  1. Place all ingredients in a blender/food processor until they form a smooth consistency
  2. Use a fry pan on medium heat and pour 1 tbsp of coconut oil into the pan
  3. Pour your desired amount of mixture onto the pan and cook for 1-2 minutes before flipping. Cook for one-minute once flipped
  4. Serve with your favourite toppings, including fresh lemon juice and honey, fresh fruit and yoghurt, maple syrup or nut butter
