Fruit & Nut Tahini Fudge

Whilst maintaining a healthy diet is crucial when it comes to our overall health and wellbeing, balance is key!

Sheridan Hauser, Personal Trainer, Nutritionist and Partner of RISE by Studio PP shares her go-to recipe for when she’s craving something sweet – a delicious alternative to a traditional caramel slice

Note: This recipe is gluten free and diary free

Ingredients:

  • 1 cup tahini
  • 1/3 cup macadamias, roughly chopped (for an alternative, try almonds or hazelnuts)
  • 1/4 cup dried cranberries (any dried fruit will suffice)
  • 1/4 cup coconut oil
  • 2 tbsp white chocolate buttons (for a healthier option, use milk, dark or diary-free chocolate)
  • 2 tbsp honey (or maple syrup)
  • 1 tsp vanilla extract
  • Pinch of salt

Method:

  1. Melt the coconut oil over a stove top or in the microwave. Take off heat and stir in the honey until combined.
  2. Transfer the mixture into a large bowl and stir through the vanilla extract and salt.
  3. Fold in macadamias, cranberries and white chocolate (leaving some for decoration on top).
  4. Line a cake tin with baking paper and pour in the mixture.
  5. Freeze for 20 minutes.
  6. Add the remaining fruit and nut toppings for decoration.
  7. Return mix to the freezer to set for a further 10-15 minutes.
  8. Store in the fridge for a softer texture for up to 5 days, or in your freezer for up to one month.
