Grain-Free Granola

Do you love granola but hate all the added nasties that tend to come with it?  

This grain-free granola is made from all-natural ingredients; meaning you can have your granola and eat it too, guilt-free! Packed with protein and good fats, it will leave you satisfied. The best part is you most likely already have all the ingredients sitting in your pantry.

Prep time: 5 minutes

Cook time: 50 minutes

Ingredients:

  • 1 cup flax seeds, ground
  • 1 cup raw mixed nuts*
  • 6 dried apricots or any dried fruit of choice, roughly chopped
  • ½ cup shredded coconut
  • ½ cup almond flakes
  • ¼ cup sesame seeds
  • 1/3 cup coconut oil
  • ¼ cup honey/maple syrup
  • 1 tbsp cinnamon 
  • 1 tsp vanilla paste

Method:

  1. Preheat oven to 180 degrees
  2. Melt the coconut oil over the stove until liquid
  3. In a large mixing bowl, add all the dry ingredients and mix together
  4. Using your hands, add and mix through the coconut oil and honey until mixture is well combined and sticky
  5. Line a baking tray with baking paper and evenly spread the mixture on the tray
  6. Place in the oven for 30 minutes
  7. Take the granola out of the oven and let it cool
  8. When cool enough, break up into chunks and place back in the oven for another 10 minutes (this part makes the granola extra crispy)
  9. Take out of the oven and let cool completely
  10. Store in an air-tight jar for up to 10 days

* Notes: use whatever nuts you want/ have in the pantry. This recipe used a mix of walnuts, pecans, almonds, cashews and hazelnuts.
