Healthy Chickpea Cookie Dough

Who doesn’t love a healthy twist on a guilty pleasure? Simple, delicious yet nutritious, this cookie dough recipe will have you going back for more by the spoonful.  

This foolproof recipe speaks for itself. Get baking and you can be the judge!

Ingredients:

  • 1 can chickpeas/butter beans
  • 1/3 cup nut butter
  • 3-4 tbsp maple syrup/honey
  • 1 tbsp flax meal
  • 1-2 tbsp water
  • Pinch of salt
  • 1/3 cup chocolate chips

Method:

  1. Drain and rinse the canned beans.
  2. Blend all the ingredients except the chocolate chips until a dough like texture forms
  3. Fold in the chocolate chips.
  4. Place in the fridge for 30 minutes to set.
  5. Enjoy!
