Raw Chocolate Almond Tart

The ultimate guilt-free option, this no-bake chocolate almond tart is the perfect healthy alternative to the traditional sugary dessert. Topped with your choice of nuts, fruit and garnishes, this can be enjoyed as an afternoon treat or a post-dinner snack.

Ingredients:

Nut crust:

  • 1 cup almonds
  • ½ cup shredded coconut
  • 1/3 cup melted coconut
  • 1 cup fresh dates
  • A pinch of Himalayan salt

Chocolate filling:

  • ¼ cup coconut oil
  • 1 tsp ground cinnamon
  • 1/3 cup rice malt syrup
  • 2 tbsp shredded coconut (to serve)
  • ½ cup cacao powder
  • 1 tbsp tahini

Method:

  1. Process the nut crust ingredients in a food processor until mixed well
  2. Spoon the crust into a lined muffin tray, pressing down firmly. Place in the freezer to set
  3. Melt the coconut oil and add the cinnamon, rice malt syrup, cacao powder and tahini, whisking until smooth
  4. Remove the tart crust from freezer and carefully spoon in the chocolate filling. Refrigerate for 1 hour
  5. Remove from the fridge and sprinkle with coconut
